




When you need a comforting meal to pick you up, a loaded baked potato with all the toppings you can dream of is the way to go. But why not take it up a notch and transform it into an amazing casserole side dish? OnePotChefShow has an easy and delicious recipe to upgrade your loaded baked potato.
To make this dish, you’ll need 6 slices of streaky bacon, 2 kilos of potatoes, olive oil, salt, pepper, 600 ml of sour cream, and 4 cups of grated cheddar cheese (or any cheese you prefer).





First, scrub and dry the potatoes, then chop up the bacon and cook it until it has rendered some fat. Transfer it onto a paper towel-lined plate to remove excess grease. Line the potatoes on a baking tray with parchment paper and prick them with a fork. Drizzle and massage olive oil all over the potatoes and season them with salt and pepper before baking them in the oven at 200°C for 40-45 minutes. After baking, let the potatoes cool down and chop them into bite-size pieces.
To assemble the dish, grease an oven-safe large baking dish and layer half of the chopped potatoes, followed by a layer of sour cream, bacon, and cheese. Repeat the steps and add the rest of the potatoes, then compress and add more sour cream, bacon, and cheese. Bake the dish in a preheated oven of 180°C for 30-35 minutes or until the cheese has melted.





This dish pairs well with your favorite BBQ meats, roasted chicken, and steak. You can also eat it as a comforting meal on its own.
